The biggest hurdle in creating a vegetarian Scotch egg was getting it to stick together but as Penny herself is veggie the motivation was there and after a number of empirical experiments this tongue twister came to be, named somewhat childishly by Neil as this has always been his pronunciation of vegetarian. Ranked in the top 5 from all our recipes this has been a great success and gave us the encouragement we needed to work on more vegetarian varieties.
